Corned Beef for St. Patty’s Day

I thought I would put this out there ahead of time for those who want to make a really good corned beef and cabbage for St. Patrick’s Day. I have found several like it online, but this one is courtesy of the Food Network and a particular favorite of mine.

Corned Beef and Cabbage

Ingredients
Corned Beef:
3 pounds corned beef brisket with spice packet
2 carrots, cut into 2-inch pieces
2 medium onions, chopped
1 small head green cabbage, cored, roughly chopped
2 cups apple juice
1 cup water
Potatoes:
1 1/2 pounds baby red potatoes, sliced in 1/2
1/2 stick butter, softened
1 tablespoon chopped garlic
2 tablespoons chopped fresh parsley leaves
Salt and freshly ground black pepper
Directions
For Corned Beef:

Put the carrots and onions on the bottom of slow cooker, and put the corned beef on top. Arrange the chopped cabbage around the beef. Add the apple juice and 1 cup of water along with the contents of the spice packet. Cook on low 6 to 8 hours until the beef is tender. Remove the beef and vegetables to a platter and keep warm.

For potatoes:

Bring a large pot of salted water to a boil and add the potatoes. Cook until the potatoes are tender, about 12 to 15 minutes. Drain and return them to the pot.

Add the butter, garlic, parsley, and salt, and pepper, to taste. Gently combine so that all the potatoes are evenly coated. Transfer to a serving bowl and serve with corn beef and vegetables from the slow cooker.

Something neat

We decided to add something really neat to the wedding. While searching online we came across chocolate fountains for weddings and events. This is so unbelievably cool. We have a long list to choose from of stuff to dip into the chocolate. 

  • Strawberries
  • Kiwi
  • Pineapple
  • Grapes
  • Oranges
  • Apple Slices
  • Bananas (frozen or fresh)
  • Marachino Cherries
  • Pears
  • Raspberries
  • Blueberries/Blackberries
  • Honeydew Melons/Melon Balls
  • Mandarin Orange
  • Cantalope/Melon Balls
  • Mango/Papaya
  • Star Fruit (Carambola)
  • Dragon Fruit
  • Kumquats
  • Fresh Coconut Chunks
  • Dried Apricots
  • Other Dried Fruits

I think the easiest choices will probably be bananas, pineapple, marachino cherries and possibly coconut chunks. The list is amazing, but we aren’t sure how well we will like the other kind of fruit with the chocolate. I have suggested that we buy a bunch of them and use my fondue pot to try them out. I know that the kids would absolutely love that experiment.

That is an awesome idea. I will have a fondue party for all of the bridesmaids and the kids. We can try all of the fruits with the chocolate and have fun at the same time. I can even plan some games for us to play too. I will have to make a meat and cheese platter to offset the sweets, but that is really easy to do. My daughter loves to help me when I make those.

Oh, perhaps one of them has a fondue pot we can use for the cheese instead of a platter. That would be awesome! I will have to pick a date for the party soon. I could make it a Valentines party since that holiday is coming up soon. We can decorate the house with a Valentines theme and make it a really great party all around. I know I am getting excited over this, but I love parties and planning  them is lots of fun, especially when the kids and I make the decorations. With all of the rainy weather we have had lately, I have been hard pressed to find stuff for the kids to do indoors. A project like this would be perfect for the days when we are stuck in the house. I am on it now. The planing has officially begun. Woot!

It’s been one of those days

Since today was a holiday, the kids had no school and it was a three day weekend. I was so totally unprepared for today. Usually I find something for us to do out of the house if the weather permits, if not then we will do some kind of project. Well, it was too cold to go out of doors as the kids have been getting over colds, so we had to stay in and I had nothing for us to do. I really was taxed to keep them from arguing most of the day, over petty stuff. Finally I just gave up and set them up in different rooms playing games and such. I just couldn’t do anything else but to separate them. I am looking forward to tomorrow because they will all be in school. I don’t even care that I have to get myself and them up at the crack of dawn. Big sigh…

Holiday cleanup

Well the holiday cleanup has begun. There were so many boxes and paper to get rid of that we burned a lot of it out back. Then we began taking down the decorations and tree, but there is a lot of it to deal with. I really out did myself this year. Fortunately the kids are helping without a single complaint and it is coming along nicely.

We had a great day yesterday and everyone was very happy. I am looking forward to the new year in hopes that it will be better then the last one. This past year was a bit difficult for everyone. I have set some goals for myself and the kids as well. I am sure we can all reach those goals as we are all very optimistic about it. Happy New Years to all!

The “true love” mentioned in the song “Twelve Days of Christmas” does not refer to a romantic couple, but the Catholic Church’s code for God. The person who receives the gifts represents someone who has accepted that code. For example, the “partridge in a pear tree” represents Christ. The “two turtledoves” represent the Old and New Testaments.c
